Chicken Salad Lettuce Wraps

Image
Looking for an easy, light lunch to make during the week! Look no further! These Chicken Salad Lettuce Wraps are my favorite quick & healthy lunch! Made with canned chicken, olive oil mayo, grapes, cucumbers, carrots and romaine lettuce. These wraps are super low carb and totally delicious! Make it with me. Growing up (and even still today) I lived on Chicken Salad! It was my very favorite flavor of sandwich! I always took them in my sack lunch to school. I was raised on canned chicken, so I've never looked at it as weird. I know some people are timid when it comes to canned chicken but you shouldn't be!  It's a great, easy source of protein! I have to dedicate this recipe to my little cousin Oakley. She is 7 and she has so much personality. She catches on very quick and is very aware of the world around her. One day, I asked her what she wanted for lunch. She told me that she doesn't eat Carbs. I had to laugh because I'm sure she's heard ...

I use my Instant Pot's to cook the chicken and the coconut rice. If you don't have two Instant Pots, don't worry. I have included directions for cooking the rice in the instant pot, rice cooker, and on the stove top. The secret to making this dinner so delicious is in the BBQ sauce! I have found a new healthy, delicious BBQ sauce. It's low in calories but it doesn't lack in flavor. It's  Stubb's BBQ Sauce ! It has a blend of tangy tomatoes, vinegar, and black pepper. It's also Gluten Fr...

Should You Try to Pay off Sleep Debt on Weekends?

Image
The short version A recent study explored whether trying to catch up on sleep on the weekend can counter the negative effects of workday sleep loss on metabolic health. Weekend recovery sleep wasn’t enough to repay the workday sleep debt and led to similar weight gain to when sleep loss continued over the weekend. In some ways, weekend recovery sleep resulted in worse outcomes than continued sleep loss. For example, weekend recovery sleep led to greater deterioration in insulin sensitivity, a key determinant of risk of developing diabetes. Some of the negative effects of sleep loss seemed to be more prominent in men. These findings don’t necessarily mean that you shouldn’t try to catch up on lost sleep when you can. After catching up on lost sleep, avoid consuming caffeine and/or other stimulants, spend at least 30 minutes outdoors in daylight as early as possible after waking, and stick to your usual pre-sleep routine.   The full version We all occasionally have perio...

Asian Ramen Salad with Peanut Dressing

Image
This ridiculously amazing Asian Ramen Salad with Peanut Dressing will have you and your guests going back for thirds and fourths. Everyone will be asking for the recipe and you’ll want to bring this easy dish to everything! It's super easy to throw together and the peanut dressing is delicious!! Make it with me! Ramen Salad? You are probably wondering what type of ramen we are using in this recipe. Your initial thought is probably correct, good old classic ramen noodles. Think freshman year survival food, and that's that ramen we are using! You can buy any flavor you have on hand, because we won't be adding the seasoning packet. We are adding the dry noodles to this salad for a delicious crunch. Are the ramen noodles supposed to be crispy/uncooked? Yes. That’s the point. The crunchy ramen noodles give it texture and bite. They do get “soggy” after they have been sitting in the salad for awhile (since it soaks up the liquid). To avoid this, don’t add the rame...

Stephan Guyenet vs Gary Taubes on the Joe Rogan Experience – Post-Debate Podcast

Nutrition is arguably the most emotionally charged of all of the applied sciences. Perhaps it’s not surprising that dialogue surrounding diet is so testy, especially on the Internet. Why is that? I can think of a couple reasons why it is so contentious. For one thing, all of us eat, meaning that every single one of us is personally invested in this topic, and we interact with it all the time. We all develop a sense of expertise, in a way that we might not for something a bit more removed from our daily life, like robotics or civil engineering. In addition, food is arguably the most primal and powerful motivator for animals, ourselves included. And every single one of us has cultivated deep-seated dietary preferences, often established in our formative years. In other words, we are all biased, to varying degrees. It’s hard for us to view our favorite foods in an entirely objective way – even when they are slowly making us sick. This, of course, is where nutrition science should sa...

The lemon filling is also delicious and layered thick over top of the crust. The flavors compliment each other so well! One tip for making lemon bars extra yummy is to use fresh lemon juice!
